Beans Poriyal

It is a healthy recipe with beans. Poriyal is a south Indian dry vegetable dish where the veggies are sauteed in spice and topped with freshly grated coconut. You don’t have to worry about the calories and weight gain. You can have it has a snack or as a side with your Sambar or Rasam rice, it will taste delicious either way.  If you are on a diet just have a bowl full of it as a meal. It is easy to cook and delicious to eat.





Let’s start cooking and have a look at the ingredients first –

French beans     – 250 gms
Cooking Oil     – 4 to 5 tbsp
Mustard seeds  - ¼ tsp
Bengal Gram    – ½ tsp
Urad Dal          – ½ tsp
Onions             – 2 nos
Garlic cloves   – 7 to 10 nos
Curry leaves    - 10 to 15 nos
Green/ Red chilies - 2 nos
Turmeric           - ¼ tsp
Salt to Taste
Grated Coconut  – 4 tbsp




Preparation –

  • Wash the beans and chop them into small pieces. Boil them in an open vessel until the water is completely evaporated.
  • Place a Kadai on Stove, Add Oil and once oil is heated, add mustard, urad dal, Bengal gram. Wait till the dal turns light brown.
  • Add garlic, green chilies, and onions.  Fry till the onions turn golden brown.
  • Add turmeric and salt, sauté for a minute.
  • Now add boiled beans and sauté for 2 mins.  Add Grated coconut and give it a stir.
  • Beans Poriyal is ready to be served.

Tip – Use the same method to cook other vegetables too, like Carrot Poriyal, Beetroot Poriyal, etc.
